Beef & Lentil Koftas

Ingredients

•   60 g lean beef mince

•   50 g canned brown lentils, rinsed and lightly mashed

•   1 tsp olive oil

•   1/2 tsp ground cumin

•   1/2 tsp smoked paprika

•   1 clove garlic, crushed (or 1/2 tsp garlic powder)

•   1 tbsp chopped fresh parsley

•   60 g tomato or plain yoghurt dipping sauce


Method

1.  In a bowl, combine the mince, mashed lentils, spices and parsley and mix well.

2.  Shape into small koftas or meatballs around a metal or soaked wooden skewer if using.

3.  Heat the olive oil in a pan and cook, turning, for 8 to 10 minutes until browned and cooked through.

4.  Serve warm with the tomato or yoghurt dipping sauce.
